Dark Cakes
Devil's Food
  • 12 c. shortening
  • 2 c. sugar
  • 2 sq. chocolate in 1 c. boiling water; let simmer 2 minutes
  • 2 eggs
  • 2 12 c. flour
  • 1 tsp. soda in 12 c. of very sour milk
Potato Torte
  • 1 c. fat creamed
  • Gradually beat in 1 12 c. sugar
  • Add 3 beaten egg yolks
  • 1 c. cold riced potato (unseasoned)
  • 34 c. ground chocolate
  • 1 c. finely chopped walnuts
  • Grated rind of 1 lemon
  • 2 c. flour sifted with
  • 3 tsp. baking powder and lastly 3 egg whites beaten light

Bake in loaf about 45 minutes or in 2 layers about 20 minutes. Excellent baked in Turk's Head pan and frosted with Seven minute Icing.

Potato Chocolate Cake
  • 2 c. sugar
  • 23 c. fat
  • 1 c. hot mashed potatoes (unseasoned)
  • 12 c. sweet milk or cold water or coffee
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 sq. chocolate
  • 1 c. chopped nuts
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 12 tsp. nutmeg
  • 4 eggs

Cream butter and sugar, add well beaten egg yolks. Add hot mashed potatoes, then alternately the flour, sifted with baking powder, cinnamon,
