CHINESE SPONGE CAKE

- 10 eggs
- 1 pound sugar
- 2/3 pound flour
- A few drops of lemon juice
(a) Beat the eggs in a suitable bowl. Mix well with sugar. Beat for an hour, being careful always to beat in one direction.
(b) Mix with the flour and lemon juice.
(c) Put into a suitable pan and steam for ¾ hour.
